Everyone seems to love it even though it's not quite your typical potato salad. It has a lot of flavor. My family even wants me to take it as my potluck dish for Thanksgiving.
Ingredients:
1 tsp FRENCH'S® Mustard Products
4 lb potatoes
1/2 cup onions
1/2 cup sweet pickles
4 eggs
1 pt Miracle Whip
1 tbsp vinegar
1 tsp sugar
1/8 tsp salt
1/8 tsp pepper
Directions:
Boil potatoes in salted water. While potatoes boil, dice onion and pickles and boil eggs. Eggs will be diced when hardboiled. Make salad dressing while potatoes boil, too: To a pint of Miracle Whip, add vinegar, sugar, mustard, salt and pepper. Taste. It should be sweet and tangy. Adjust as needed. When potatoes are tender, drain and then mash them with 1/2 stick of butter. Add onion and pickles. Add more if it seems too sparse. Stir in dressing. Make and add more if necessary to make keep salad from being dry and also to add more flavor. Stir in 1 tsp celery seeds. Good at room temp or chilled until meal time.
1 tsp celery salt also needed. I went to the lower side of quantities needed since it's a lot easier to add more than to try to take out!
